Pumpkin ricotta pancakes are both richer AND lighter than a typical pumpkin pancake. Made of what tastes like pure magic - they are perfectly spiced, made rich with ricotta, and lighter with whipped egg whites. Something I dreamed about, and now here it is EVEN MORE delicious in real life.

Makes 12 Pancakes, Serves 2-4 | Level: Intermediate (casual use of meringue)

Ingredients

Pancakes:

175g flour

1/2 teaspoon baking soda

1/2 teaspoon salt

2.5 teaspoons pumpkin pie spice (mix your own if desired!)

200g ricotta

200g pumpkin puree

110g milk (any type works)

1/2 lemon, juiced

30g melted butter

1 teaspoon vanilla

2 egg yolks

5 egg whites

60g sugar

Extra butter or oil to cook

Maple Butter (Optional):

56g (1/2 stick) salted butter softened

2 tablespoons maple syrup

1 teaspoon cinnamon

Method

For the Pancakes: In a big bowl whisk together, flour, baking soda, salt, pumpkin pie spice. Make a well in the middle and then add ricotta, pumpkin, milk, lemon juice, vanilla, egg yolks. Mix to combine, but do not over mix.

Next, make meringue. With either a stand mixer or an electric mixer, whip egg whites for about two minutes on high speed until stiff peaks form. Slowly sprinkle in granulated sugar, and continue to whisk for another few minutes until glossy and smooth.

Gently whisk in a third of meringue into the batter until just combined. This is just to loosen the batter so you don't be too delicate. Add the rest in and a fold in gently until just combined.

Preheat a pan to about medium heat, and ,melt in a little butter or oil. Using a large cookie scoop or a third cup measure to scoop each pancake into the pan, cook on medium heat for 2 to 3 minutes on each side until golden and cooked through!

NOTE: keep a sheet try in the oven preheated to 300F, and place finished pancakes in to keep them warm while you finish cooking the rest.

For the Maple Butter: Just whisk until combined, it will separate at first though. Do not be alarmed. Keep whisking.

Happy Eating! Did you make this? Tell me how it went below!
