Flakey Pie Dough

This is How You Make The Flakiest Dough of Your Life— Level Up Any Pie.

The secret here is in the high fat butter but mostly the vodka, which evaporates quicker than water leaving you with a flakier dough.


Makes 2 Sheets (a top and bottom crust) | Level: Beginner

Ingredients

  • 385 grams flour

  • 10 grams fine salt

  • 30 grams sugar

  • 250 grams high fat butter (84%)

  • 100 grams ice water mixed with…

  • 50 grams vodka or cider vinegar


Method

Mix dry ingredients, cube butter directly into flour mixture, work it in with your hands, then mix in ice water vodka mixture, starting with half, until just combined and shaggy, you don't need all the liquid usually. Finish patting it together on the counter with your hands. The goal of adding less liquid is to make the crust flakier, just enough so it’s a dough, but not sticky.


Now, this part is imperative! Roll out just a bit, then cut the dough in half and stack the pieces then roll together until they are fused, do this about five times for a rough lamination to create more elite flakes.


Another note about the flakes is the vodka/cider vinegar does a THING for that so don’t skip. Cut into two pieces and chill. If you’re prepping, Freeze wrapped in plastic wrap until needed.
