The BEST Apple Pie Filling

Best Apple Pie Filling for Homemade Pies and Galettes — Thick, Flavorful, and Never Runny. Adding a little orange zest makes all the difference in the world, this is one of my best secrets to apple pie!


Serves 8-10 (one standard pie) | Level: Beginner

Ingredients

  • 3.5 pounds apples, peeled and cubed (mix of Granny Smith & honey crisp)

  • 3 tablespoons butter

  • 100g of brown sugar

  • 100g of white sugar

  • 1tsp salt

  • 1 teaspoon lemon zest

  • 1 teaspoon orange zest

  • 2 teaspoon cinnamon

  • 1 teaspoon fresh of nutmeg

  • 1/4 teaspoon allspice (optional)

  • fresh lemon and orange juice

  • 2 tablespoon flour

  • 2 teaspoon vanilla


Method

Peel, core, and cube all of your apples. This is where you get to choose how big the pieces are, I like them slightly chunky for a pie, and smaller for pastries and everything else! You can even cut them into wedges for an ultra rustic feel.


Melt butter in a saucepan on medium low, then add everyone in but the flour and vanilla. Stir, simmer until the apples are tender but not mushy. They should be crunchy but not raw in the middle, I always give one a bite to test it.


When they are done, strain the chunks from the liquid (falls liquid gold) away from the chunks, while reserving the liquid. Put the liquid back into the pan then return the apples to the bowl to cool in the fridge while you reduce the sauce. When it’s considerably thicker but still moves, whisk in flour a little at a time so it does not clump. Simmer for a couple mins until a bit thicker then remove from heat, whisk in vanilla, and return to apple chunks.


My note with reducing, is that you'll want to keep the liquid ribboning like a warm caramel for a pie, and a bit thicker if you plan to put it in a cinnamon roll. Let cool completely before using. I use this in pies, pastries, breads, mixed into vanilla ice cream, on waffles/ pancakes/ dutch babies! Options are endless. If you plan to make a pie, bake according to dough instructions!
