Creamy Roasted Garlic & Celery Root Soup

Simple Yet Sultry Soup That's so Easy and Healthy - One of Soup Season's Finest. If you've never cooked with celery root (also named celeriac) its like a potato crossed with all the best flavors in celery, earthy and bright. Serve this with garlic toasts and you will never have leftovers!
Serves 4-6 | Level: Beginner

Ingredients
2 tablespoons butter or olive oil
1/8 teaspoons cayenne
3 medium leeks
Salt & black pepper to taste
1 large Celery root (mine was 1.8 pounds just for your reference)
1 bulb roasted garlic (or 4 large raw garlic cloves)
4 cups broth (bone broth, veggie, whatever you usually use)
2 bay leaves
5-6 sprigs of thyme
1/2 cup plain greek yogurt
1/2 lemon juiced
Method
Prep ingredients, peel and cube the celery root, wash and chop the leeks. Melt butter in a pot over medium heat, then add celery root, garlic, leeks, cayenne, salt, pepper, bay leaves, thyme. Sauté until fragrant for a couple minutes. Add broth, cover and simmer until the celery root is fork tender. Remove thyme stems, and bay leaves. Blend until smooth, stir in yogurt and lemon juice. Taste to adjust seasonings! Ladle into a bowl, swirl in extra yogurt and sprinkle thyme on top if you feel like it. Serve with crusty bread!
